What do you do when you buy a whole bunch of blueberries and cannot eat them quickly enough?
I usually end up putting them in some oatmeal, paring them with some cottage cheese, or shoving a few handfuls down my throat – you know, that is the normal thing to do with them, right?
My partner and I are pretty regular with our sharing of Facebook Reels and TikTok videos (me more than him; he doesn’t even use TT – weird, right??), and this was a blueberry recipe he had tossed my way over the summer, and I knew the combination of blueberry and lemon was going to be a win. I know this because I have made a few blueberry and lemon desserts – allow me to share them with you.

My Notes: Blueberries, you will need them. Alexandra’s recipe called for whole or 2% milk, but I can tell you I used Skim, and it worked fine. Typically, we drink almond milk, but there are just some recipes in which we cannot use almond milk. I did not even want to try that with this recipe. We used sugar in the raw for our sugar, added about ¼ cup more blueberries than her recipe, added a bit more lemon zest, and omitted the powdered sugar. I have to maintain my weight loss, so it is good for me to skip some things like that. And, honestly, I did not miss it.
Preparation: Preparing the batter was a breeze. It came together quickly, incorporating lemon juice and blueberries into the mix, creating a visually appealing, speckled texture.
Baking: The magic happened in the oven. The smell was utterly irresistible as the Dutch Baby Skillet Bake began to rise and turn golden brown. The kitchen was filled with the aroma of fresh lemon and warm blueberries, which made it difficult to wait for it to finish baking.
Texture: The texture was perfect – slightly crispy on the edges and wonderfully fluffy in the middle – even though it does flatten a bit, it is still fluffy. It had a tender, pancake-like quality with a delightful contrast from the bursts of blueberry goodness.
Taste: This is where the dish truly shines. The lemon-infused Dutch Baby had a zesty and slightly tangy flavor, perfectly complementing the sweet bursts of blueberry. The balance between tart and sweet was spot on.
My partner decided to drizzle maple syrup over his slice, adding an extra layer of decadence.
Presentation: As recommended, I served the Dutch Baby straight from the skillet. It had a rustic charm that added to the overall experience— the contrast of the golden-brown pancake against the dark, seasoned skillet made for a beautiful presentation.
Verdict: The Lemon Blueberry Dutch Baby Skillet Bake is a culinary masterpiece that combines the brightness of citrus and the sweetness of blueberries in a way that feels indulgent yet refreshing. It’s a versatile dish that can be served for breakfast, brunch, or dessert. My partner and I agreed that it’s a keeper.
I highly recommend this recipe to anyone looking to add a burst of sunshine to their plate. It’s simple, delightful, and a crowd-pleaser in every sense.
