Monday. Oh Monday. Why do you taunt me so. If you have the Monday blues like I do, and need something quick to put on the table, check out this Roasted Squash and Beet Salad Recipe from Recipe Corner. It’s the perfect addition to your #meatlessmonday recipe routine.

Last week has worn me out. I don’t know if it was because I psyched myself out with all the 40th birthday stuff or if the Michigan heat wave is taking its toll on me. I’m still trying to recover and get some things done.

I did have a wonderful time celebrating my birthday. If you missed the post, you should stop by because I am giving away a Hamilton Beach Wave blender. This is thing is super-duper amazing and I have been using mine to whip up some new smoothies. I haven’t been too terribly creative though. Boo. Sad face. Emoji. Boo. I really need to up my game and come up with some new flavors. I’ve been toying with green tea matcha. Some have bombed terribly but a few of them have turned out marvelous. Think, bulletproof coffee only with green tea. #yumazing

I am still working on the photos for my fabulous dinner at chef Michael Symon’s restaurant in Detroit, Roast. I do have a bit of a sneak peek over on Nevermore Lane where I talk about the fabulous Anjolee earrings I wore. I had such a wonderful meal, expensive, but so worth it and it made it super special for my 40th. I have so much to tell you guys! Darn me for being so tired and drained and not getting to those photos today!

At any rate, I hope you enjoy this squash and beet salad.

See you soon!
