Recipe Review: Exploring the Magic of Michael Symon’s Pork Meatballs in Sauerkraut (with some short story fiction!)

Sometimes, you just make these recipes, take a few pictures, and then POOF! All has been forgotten. It has been a while since I made this recipe and I want to make it again. That is when I told myself I should probably write my review before I do that. While my pictures are not that great because my days of food photography are long over and now I am just doing this for fun, this was one of the best Michael Symon recipes I have made.

For anyone who has been around this space for a while, you know a lot of my food posts come from the brand I sold, YUMeating, and they were merged here. On my 40th birthday my ex-husband and I got to go to Symon’s restaurant in Detroit called Roast. Sadly, Roast closed down a few years ago which makes me really sad as I have told my current partner about it so many times – those amazing bone marrow appetizers – that I am sure he’s over it. (Truth be told, I have stopped talking about it.)

Over the last few years Michael has created a few cookbooks on health and wellness, showcasing his better health and weight loss. One night, my partner was scrolling the book of faces and found a reel of Symon preparing these amazing pork meatballs in sauerkraut. I searched high and low for that recipe; someone’s YouTube video was the closest I could come. That meant I would have to hunt down the cookbook this recipe was in, and I did – “Simply Simon Suppers.” I love a good cookbook but I despise buying them online without being able to look at them first. 

Okay, enough about me. Let’s get started, shall we?

My Thoughts

The Pork Meatballs in Sauerkraut exceeded all expectations. The meatballs were juicy and flavorful, with the perfect balance of spices. The sauerkraut added a tangy punch that complemented the richness of the pork beautifully. Adding apples and apple cider vinegar seemed weird initially, but it amazed me. Overall, this recipe is a testament to Symon’s culinary prowess and ability to create both comforting and sophisticated dishes.

If you grab the cookbook you will see that there are some sides he creates to pair with this recipe. I didn’t make those. Instead, I made some smashed potatoes and cornbread. As for the Sauerkraut, if you can find it make sure to grab what he recommends – Cleveland Kraut – as you will not be sorry to spend the extra few dollars compared to the other brands of bagged, canned, or jars. Trust me, while many of those are amazing, and I have tried almost all of them – this stuff is banging. He used the Gnar Gnar in his recipe. We could not find that here so we used the Roasted Garlic and, yeah, the best.
