Low Carb 'Chips' and Avocado Dip

How often have you heard that going low carb is hard because you have to give up so many favorite foods? I know the feeling. I was one of those people. Over time I found replacements. I say replacements because I have replaced an item and not just substituted it with a low carb variety. For example, the chips in this recipe are nothing more than cucumber slices. I prefer to use the cucumber slices because they are lower in calories and you can slice them thick in order to hold the dip. 

For me this is better than buying a substitution, which would be a low carb chip or perhaps a low carb tortilla and making my own chips. The point for me isn’t just carbs, but often calories too. Your calories do matter and where they come from should matter too. By using cucumber not only do I get another serving of vegetable, but tons of vitamins and minerals too.

My dip is nothing more than a mashed up avocado with some lemon juice, salt, pepper, and garlic. If I want to keep my calories lower and beef up my avocado I’ll use 1/2 an avocado and mash it with some peas or some chickpeas.

Once I have my cucumbers sliced I like to use some garlic and sea salt that comes in a little grinder. It’s so good and I put it on a lot of goodies. It gives the cucumbers a bit of pizzazz.

Another chip and dip I like to make is celery sticks and salsa. All that crunch and just enough spice tends to break cravings when those nighttime snacking desires hit.

  2. This is a great idea! I always avoid chips but its hard when there is good avocado dip around you know? or Hummus? I’m always craving it but the chips make you so bloated – this is a great idea.

  7. I love celery with just about anything. That is my chips and dip. I love salsa too. I would take this any day over potato chips.
