How often have you heard that going low carb is hard because you have to give up so many favorite foods? I know the feeling. I was one of those people. Over time I found replacements. I say replacements because I have replaced an item and not just substituted it with a low carb variety. For example, the chips in this recipe are nothing more than cucumber slices. I prefer to use the cucumber slices because they are lower in calories and you can slice them thick in order to hold the dip.
For me this is better than buying a substitution, which would be a low carb chip or perhaps a low carb tortilla and making my own chips. The point for me isn’t just carbs, but often calories too. Your calories do matter and where they come from should matter too. By using cucumber not only do I get another serving of vegetable, but tons of vitamins and minerals too.
My dip is nothing more than a mashed up avocado with some lemon juice, salt, pepper, and garlic. If I want to keep my calories lower and beef up my avocado I’ll use 1/2 an avocado and mash it with some peas or some chickpeas.
Once I have my cucumbers sliced I like to use some garlic and sea salt that comes in a little grinder. It’s so good and I put it on a lot of goodies. It gives the cucumbers a bit of pizzazz.
Another chip and dip I like to make is celery sticks and salsa. All that crunch and just enough spice tends to break cravings when those nighttime snacking desires hit.
Have you made a major swap in the food department recently? Tell me about it.

Until about 6 months ago I hated avocados. Out of nowhere, I decided I loved them and now I can’t get enough.
This is a great idea! I always avoid chips but its hard when there is good avocado dip around you know? or Hummus? I’m always craving it but the chips make you so bloated – this is a great idea.

I love avocados and I love to make guacomole dip, love it!
Wow what a way to cut carbs. I’m not a huge fan of avocados but this does look good.

I’ve never thought to dip celery sticks in salsa. That’s a new one I’ll be trying. I’ll have to try your cucumber dip idea as well.
I love avocados & anything that includes them. This dip sounds so healthy with the cucumbers 🙂

This is a great suggestion and couldn’t have come at a better time for me. I am needing to give up chips and dip big time,
Yum ! This looks simple quick and healthy! I’ll have to try it

Your dip sounds really good. Eating veggies with dip takes the guilt out of it — I’m all for it.
We eat rice cakes instead of chips now. My kids prefer cucumber chunks
To most junk food so that’s pretty good!

I love anything with avocados, never thought to serve it with veggies though. I am not strong enough to do a low or no carb diet – I love my carbs too much.
2 of my favorite things to eat! I never thought about using a cucumber as a chip but it would definitely give the guac a great taste!
This is a great idea to fill that “crunchy” craving without carbs. I love guacamole and never thought of dipping cucumbers in it.

I love any with avocado and so I’m going to try this. We just bought some on sale recently too.
I love celery with just about anything. That is my chips and dip. I love salsa too. I would take this any day over potato chips.
I haven’t had a major food swap recently, but I totally agree with swapping instead of substituting.

Avacado is so healthy and yummy! I bet these tastes really great!
I love avocado dip with chips, but I never had it with cucumber slices! Great idea for staying healthy while munching on a snack. I’ll try it out tonight!
Yum! That’s a great idea because cucumbers are really crunchy. It’s hard for me to give up carbs but I have done it.
This looks really yummy. Avocado and cucumber is a great combo, and it’s super healthy.

I’m in a rut right now. I need to give these ‘chips’ a try and see if I can get on a heathy trend!
I love avocados, but never thought to use them on cucumbers. I am totally doing that next time!
Erica Brooks says
I don’t think I’ve ever dipped cucumbers in avocado dip in place of chips. Sounds tasty. I’ll have to try it.

I love the sound of these, I am awful for thinking of more god for you snacks I really need to keep a list so I can grab them at the right times.
I love low carb recipes like this. I had not thought to use the cukes as chips. I’ve used cukes as bread for tuna though.

This looks really good. I’ve never had avocado before.

This looks super yummy as a snack or even just something to munch around on while movie watching!
This looks like a delicious healthy snack, that even my boys would go for. I love it thank you again for sharing. I will have to incorporate this as well.
I LOVE cucumbers. Raph hates them. He won’t even touch them. I’m that way about avocado though… To each their own. Thanks for sharing on #yuck
We both love cukes. Until he met me he hated avocados. Now he’ll pretty much eat them plain. I love them.
