Have My Steak and Eat it Too (Cast Iron Cooking)

For those who think they have to give up steak and potatoes in order to lose weight I have only one thing to say to you –

WRONG!

I found these thin sliced Angus steaks at Kroger on the quick-sale section for about $4. I immediately took them home and tossed them in the freezer. I am NOT the biggest meat eater. When I did Weight Watchers the first time I was vegetarian. I ate a lot of Morning Star and Boca products. I started WW shortly after having emergency gallbladder surgery and my body just did not handle red meat very well. At one time I was even staying away from eggs, cheese and most seafood’s. Chicken was a bit harder, so I made sure it was free range and not full of steroids. My friends used to tease me for being a PETA advertisement. Whatever.  I felt SO much better.
When I do cook a steak I usually have a very small piece and share the rest with Big M. Since these were thin sliced and I took all the fat off I did not see a point in sharing. As my luck would have it, I only had a bite of one of them! I prepared dinner too late and I was not hungry by the time he got off work, so mine was packed for the next day. I then had no desire to eat it, so I left it for him. I did take a taste and it was perfect.
When I can’t grill outside I prefer to cook my steaks on broil, in the oven, in a cast iron skillet. I find this method works wonders for the cheap cuts of steak.
First I put some onions and green pepper in the bottom of the pan.
Then I add salt, pepper, seasoning, lemon juice and Worcestershire. I broil both sides turning every 2-3 minutes until its done. We like ours medium well.
The side dish I made yellow squash and zucchini.
Put a little oil in the pan and use a paper towel to wipe it giving just a light coating.
Cook to your likeness. A serving has no points.

  1. I still have to tell Big M the he can't cook past Med. heat in a cast iron skillet or they burn everything!LOL. I love them for grilling , camping and the oven because you can just toss it into a one pan meal.
