Low Calorie Mixed Berry Smoothie
With grad school coming close to an end, I don’t have time to spend preparing three meals. I try to cut corners when I can. This was the perfect low calorie lunch for me. Clean, full of vitamins and packed some protein punch!
For the smoothie:
1 scoop vanilla whey (the kind that has no artificial junk)
1 cup mixed frozen berries
1 cup raw pumpkin (we pick pumpkins, scoop out the inside and can it. No sugar, nothing).
1 cup unsweetened coconut almond milk
Blend until smooth.
The salad is 1 cup romaine, 1/2 cup raw spinach, and 1/2 tomato.

Looks delicious!! I don't even remember the last time I ate anything with pumpkin, so I'll probably hold off on that. Do you know where we can get decent whey? I bought one, started using it, and then read ingredients it wasn't supposed to have. I don't use it, but I hate to throw it out, too.
I use Designer Whey right now but I want to switch to Raw brand. (http://www.gardenoflife.com/)Designer was the best I could find at Rite Aid. Oddly enough, the pumpkin adds no pumpkin flavor, its more of a binder/thickener.
