Hot Vanilla Cinnamon Flax Cereal – Low Carb
Once I found out I had PCOS and needed to adopt a low carb lifestyle I started to cut out my morning cereal routine. I was fine with eating eggs because I do love them. But, in the cooler weather months I miss my warm cereal.
Here is a recipe for a low carb hot cereal. It’s a combination of some trial and error of what finally worked out for me and my tastes.
This basic recipe can be changed and adapted to your tastes.
Boil 1/2 c water.
Reduce heat.
Slowly add 1/4 ground flax seed (or flax meal). Stir.
Add a dash of salt, Sugar Free Vanilla Coffee Syrup.
1 packet of Splenda (or a drop of liquid Stevia).
I then put a dash of cinnamon on the top.
My net carbs were 2.5 (0.5 for the packet of Splenda and 2 for 2 servings of my flax meal)
The consistency is a bit goopy. I read that some folks will add a scoop of low carb protein powder or wheat bran to thicken it up. I found it to be just fine for me.
