Times are tough. Food prices keep going up, and yet the wages are not. After losing over 60lb. I knew I needed to mind not only the budget but also the calorie range. I love beans, but there are only so many days of the week I want to eat beans, so I began my quest for something not so heavy but also light on the wallet.
Tofu is pretty cheap, and its a decent amount of protein, which helps me hit my macros. I went on a hunt and came across “Crispy Oven Baked Tofu” by the Minimalist Baker.
I actually like tofu, but I need to be crispy and not that weird squishy sponge texture. I think I found a winner!
