Chocolate Butterscotch Chia Smoothie

chocolate butterscotch chia

I looooooved butterscotch as a kid. I remember the days of my mother making butterscotch pudding on the stove. I wouldn’t wait for it to cool. I enjoyed each and every bite just a little bit warm and oh so creamy. I remember going through this phase where I wanted all my candy to have butterscotch flavor. If I had to pick between chocolate and butterscotch, it was always butterscotch. As an adult, I don’t eat it near what I used to. But when I do I am always taken back to a happy memory of me and my mom.

So, I wanted to recreate that in a smoothie form so I could be reminded of those memories as I sip a health-ified smoothie. For me, this works. The butterscotch pairs nicely with the smoothie. While I didn’t add any greens to it, you could easily add some spinach like I do for most of my smoothies. What I like about using sugar-free instant pudding is that it makes the smoothie thicker and often I can eat it with a spoon. For me that is perfect because I get the protein of the smoothie but I can trick my body into thinking I am eating instead of drinking. The addition of the chia gives it good fats and all sorts of vitamins and minerals.
