I can’t believe we’ve made it through half the summer. I noticed my sister-in-law posted Monday about how her kids started back to school already in AZ. Kiddo doesn’t go back until September, after the holiday. So we’ve still got a few weeks left. I’m thankful for that because that means more time for grilling. I am big on the outdoors and I love grilling, swimming and just sitting around enjoying the fresh air. Sadly, even though we are rural, we live on a very busy road so a lot of our peaceful outside time ends up in screaming matches between the traffic to the tourist town next door, the semi trucks, and the motorcycles. For years I have been seeing fish tacos circulating around the internet. Within the last year or so it seems there was s fish taco explosion. I just couldn’t fathom the thought of having fish as a Mexican meal ingredient, much less have it on a taco. No, Sir. That was not for me.
Every time I saw a platter come near my table when Mr. Yum and I would eat out, I would turn up my nose. I mean, how could anyone put fish on a taco? The fish would mix with the hot sauce , lettuce, tomato, cheese, and beans. [Read more…]
I’m never one to miss an opportunity to share a meal. You guys are well aware of some of my failures so this may come as a shock, but Mr. Yum didn’t want me to post this. Stuffed veal burgers were going to be his return to YUM but he felt they were not up to par with his other dishes. Ok. Fine. I can understand that. But darn it, if he won’t post them, I will!
We are grillers. Nothing makes me happier than goodies char broiled to my specific tastes and I won’t miss an opportunity to do so. Bring on Fall. Bring on Winter. It doesn’t stop us from grilling outside! Oh yes, we’ve been known to grill a time or two in the middle of winter. [Read more…]

Did you know that? I know I didn’t until I decided we should make this recipe. I had been wanting to try out some recipes with parchment paper for a while now and I knew this grouper and scallions we purchased on sale would be a real treat for this low carb recipe found in the Atkins cookbook “The New Atkins for a New You Cookbook.” I even decided to let the husband help. Ok. Everybody makes a dang beer can chicken, so I decided that I didn’t want to conform to the man’s way of making beer influenced poultry delicacies.
I got this recipe while looking around AllRecipes from a guy named Clay apparently. This recipe was heavily modified in the way it was done, but I wouldn’t consider it “inspired by” as opposed to “used by and modified”. Either way, let’s get at it.
