Spray roasting pan and rack with cooking spray; place roast, fat-side up, on prepared rack.
In a small bowl, combine caraway seeds, cinnamon, mustard, salt and pepper; sprinkle over roast. Toss apple and sweet potato slices with oil; place around roast.
Cover loosely with foil and roast for one to one and a half hours. Let stand 15 minutes.
Serve roast in slices and surround with the apples and sweet potatoes.
