I stepped out of my comfort zone. I have been putting this recipe creation off for ages. It just seemed like it was so hard and too many steps. But then I got to thinking. I am a huge fan of using dry beans for soups and other creations. So, if I can let beans soak overnight and sometimes my bean things cook for a day or two. Generally I am a creature of habit when it comes to my smoothies. I’m trying really hard to get creative with some of these because I also know if I make the same thing every day I am going to get bored and quit.
This recipe was from Day 4 of the 30-Day Green Smoothie Challenge. I had not been able to get to the store so I was scrounging through my cabinets and freezer to use ingredients on hand. I was actually quite surprised at how smooth and creamy this one turned out.
I was also pretty surprised at how easy it was to blend these cashew in my cheapie Kmart blender. Woot!

Last year hubs and I decided that our parents had enough ‘stuff’ and it was getting harder and harder to purchase gifts for them. His mother, a retired nurse, his father a newly retired respiratory therapist and his step-mom a nurse have everything they could possibly need and the money to buy what they don’t. My mother is not in the medical field, however let’s just say she has a job with the written world and even though she can’t just up and buy whatever she wants, she has what she needs. So, we do buy her gifts, but his parents we decided to make foodie baskets for with a little something special. They were a hit!
Yah me! *happy dance*
So when McCormick asked me to try out some products and gave me a list of recipes to either use or give my own twist on I was all over that list like butter on sliced bread, knowing I would find something useful for my gift baskets.
