When I was a kid, my mother was the bread-winner in the family. My dad was battle a drug addiction problem so he wasn’t exactly present despite being right in front of us. My mother worked long hours and even though she did cook a lot from scratch, she had her moments when oven was best. One of my favorite things was the frozen pot pies. I don’t know about you, but I am missing summer just a little bit right about now. We had some serious winds and rain last week, then the weekend was filled with a bit of sunshine. It was nice. I needed that since I spent the better part of my weekend sorting through boxes full of things which I had to sort on whether I was taking it or leaving it here. Fall is in full swing. We were teased here in MI as the temps were still lingering in the 80s here and there. I was holding on as long as I could. As much as I love food, sometimes I hate cooking. Don’t even get me started on the cleaning up afterwards.
Shortly after I started YUM eating I quickly realized how much of a mess I was going to be cleaning up – ALL the time. While I do get help sometimes, I don’t really get a lot of help with the photo set up, shooting, presentation and plating of food. When I have starving people staring at me, wondering when I am going to feed their mouths, I feel frantic and rushed. Did you catch my post about the chicken avocado brown rice cake? Well, if you didn’t, you should really check it out! I’m a sucker for simple snacks. I try really hard to stay away from prepackaged stuff as much as I can because I know it is not the best option for me. But, what is the best option for me (besides a piece of fruit or some vegetables) when I need something quick and don’t want raw foods? The whole food thing boggles my mind. Eat this. Not that.
