I’ve been trying to get back to my low carb / keto (ish) style of eating just so I can keep added sugars out of my diet. I haven’t been so good lately. PCOS isn’t going to fix itself and since there is no cure, I owe it to myself to find things I can eat which will help me manage it. A low carb lifestyle really helps with that, so I am on a mission to get back to that. I have been wanting to make these bacon wrapped mini meatloaf for quite some time. I can’t believe we’ve made it through half the summer. I noticed my sister-in-law posted Monday about how her kids started back to school already in AZ. Kiddo doesn’t go back until September, after the holiday. So we’ve still got a few weeks left. I’m thankful for that because that means more time for grilling. I am big on the outdoors and I love grilling, swimming and just sitting around enjoying the fresh air. Sadly, even though we are rural, we live on a very busy road so a lot of our peaceful outside time ends up in screaming matches between the traffic to the tourist town next door, the semi trucks, and the motorcycles. When I started thinking about some new recipes I wanted to create this March, I immediately started thinking about Scottish Pie. While not Irish, still very Celtic and often sold in many Ireland destinations – with lamb. I have yet to find a true authentic Scott’s pie recipe like the one we had at Up N Downs, but I haven’t given up. Since we’ve already made Shepherd’s Pie, I decide to try another pie – Guinness. We’re really trying to get control over our food and cut calories where we can. I desperately need to bring my weight down so the hip and back pain can be managed. One of the things I find really frustrating is that the leaner meats are a lot more expensive than its full fat counterparts. When the government is screaming at us about the cost of obesity the should be yelling at the food manufacturers for their pricing structure. [Read more…]
I’m never one to miss an opportunity to share a meal. You guys are well aware of some of my failures so this may come as a shock, but Mr. Yum didn’t want me to post this. Stuffed veal burgers were going to be his return to YUM but he felt they were not up to par with his other dishes. Ok. Fine. I can understand that. But darn it, if he won’t post them, I will!
We are grillers. Nothing makes me happier than goodies char broiled to my specific tastes and I won’t miss an opportunity to do so. Bring on Fall. Bring on Winter. It doesn’t stop us from grilling outside! Oh yes, we’ve been known to grill a time or two in the middle of winter. [Read more…]
