Clean Eating Crockpot Breakfast Porridge

Don’t let the name fool you. It’s really just fancy oatmeal with a whole lot of extra yummy goodies for added health benefits. Trust me, it’s so easy.  What I love about this recipe is that I can I can have breakfast prepared for the week. I’m a creature of habit and eating the same thing for breakfast all week long doesn’t bother me. I can also freeze a portion of it for later time. If using old-fashioned oats you can prepare this before bed and wake up to a delicious breakfast.

Ingredients
  

  • 1/2 cup flax meal
  • 1/2 cup homemade pumpkin butter or puree
  • 2 cups Irish steal cut oatmeal
  • 1 tsp pumpkin spice
  • 1 tsp cinnamon
  • 4 cups water
  • 4 cups unsweetened almond milk
  • 1/3 cup currants
  • 1/3 cup unsweetened shredded coconut
  • 1 1/2 tsp real vanilla

Instructions
 

  • Combine all ingredients in your crockpot and cook on the lowest setting for 4 hours.

  1. That looks really yummy! Is the cocoanut optional? I really hate cocoanut. Also, where does one find pumpkin puree or butter? I have persistently avoided anything to do with pumpkins my entire life, including pumpkin pie, because I don’t like the idea of that goopy stuff in the middle. I can’t stand the idea that it would have touched any part of something I am going to put in my mouth (Don’t laugh, my grandmother wouldn’t eat squash because she said she wasn’t going to eat something that sounded like what you do to a bug. She never tried it). But I keep seeing all these amazing recipes involving pumpkin on so many blogs. I don’t believe I could bring myself to eat something so very obviously pumpkin, like a pie, but including it in a recipe might not be so bad. I will never go to the trouble of cutting up and getting all of the guts out of it and… just no. Ick. So where do I go for all things pumpkin?

    1. Oh sure you can leave out the coconut!

      You can find canned pumpkin in the grocery canned vegetable isle. I think the big brand in Libby. I make my own so I could get away from the canned stuff. When its mixed in with the oats it doesnt taste like pumpkin. I add it more for the vitamins and minerals and the moisture. Don’t get pumpkin pie filling. Get pumpkin puree. It’s not loaded with sugar and crap.

    1. What happened? Mine don’t make a mess at all. I use McCanns Irish Oats. I am not sure if that makes a difference or not. If you cook them too long I could see where they would stick to the edge, or if you put to much oats in there and as they cook they expand and pour over. As for my clean up, if I have a sticky situation with my crockpot, which is rare because it’s pretty stick-proof – I just soak it in hot water with some soap overnight. You could try using a little cooking spray and spraying the inside of your crockpot. That might help. Or greasing with a method you prefer.

    I just totally burst out laughing. I seriously had no idea that Porridge was a real thing. I thought it was made up for the three bears story LMFAO!

  3. Mmm, this sounds yummy. Not a huge fan of pumpkin but I would make this without it and I bet it would still be good. Maybe substitute almond butter instead?

    1. There are many different varieties of porridge. You can use corn meal or oats. Then their is wheat and barley. A lot of grains and thick flowers can be made into a porridge.

  4. I eat oatmeal every single morning. I love adding different things to it so it has flavor. I have never made it i a crock pot though – that would be nice to wake up to breakfast.

    I could eat this everyday! I wish my kids liked it as much as I do. Will have to keep this recipe handy for when I have a house full!

    1. You can easily make this on the stove. You would basically just follow the cooking instructions for the oats you use. Might have to adjust the temp or cook time for the other ingredients.

    I’ll admit that the recipe title kind of threw me off a bit. But the ingredients…yea, I can’t wait to try this!
