I know I have some meatless recipes that were posted on Monday’s in the past, but starting from this day forward I am going to be showcasing my meatless recipes in effort to help you go meatless on Monday’s too. Chickpea Stew with White Beans
This soup is so many wonderfuls. Well, it’s not really a soup. It’s a bit ‘meatier’ so I am going to call it stew. It’s vegan, sugar-free, clean and just all around good for you. The best part is that it is super quick to make. This chickpea stew with white beans is another recipe that happened quite by accident. Skinny Stuffed Portobello Mushrooms
I love mushrooms. I love my moms stuffed mushrooms with all their full fat cream cheese and cheddar cheese glory. I love portobello mushrooms because you can cram so much more in there! I also like them grilled to replace a hamburger. They are actually quite yummy saute and put on a whole grain bun with some seasoning. But, I’m getting ahead of myself. Vegetarian Quinoa Enchillada
There comes a time in my eating world where I have to step out of my comfort zone and think outside the box. Since leaving my Oklahoma life behind and moving to Michigan, I’ve become so much more of meat eater and I personally don’t like it. The first year after my divorce I lived with my mom. My grandparents had both just passed with a year of each other. My mother had left everything in OK to move to MI to take care of them as they battled their cancer. Have you ever had one of those days when you are out of everything important but you just can’t get to the store? Ever have someone decide at the last minute they want biscuits with their dinner?
