So, you made the pizza pockets from Monday and now you are left with an open jar of sauce. Or, you have some leftover spaghetti. Maybe, you just want something new and fun to try! Things have changed a bit here on the YUM eating household. Kiddo is living here full-time since Mr. YUM now has full custody, so that means we’ve had to adjust our grocery budget a bit. One of the reasons I decided to stay in Michigan after my initial move here to clear my head, was the cooler temperatures. Oklahoma summers last much more than the Michigan 3- month time period. I think my first summer here it hardly made it past 80. In Oklahoma I am used to triple digits with heat indexes making it well into the 120s. Yuck! It is an interesting sight sometimes, to live in a place where the government issues heat advisories and has the Red Cross set up on street corners to provide bottles of water to those who are out in the heat.
I love pizza. However not all pizza loves me. I wish it wasn’t this way, but, well….yeah. It sucks. But, at the same time it is probably for the best since pizza isn’t exactly numero uno on the healthy foods list. Matter of fact, it’s really down on the bottom. Like, way down. I know when I did Weight Watchers moons and a half ago they really tried to teach you that it is ok to have fast food style pizza ( yah!) but you should really keep it to 1-2 slices and count those points (or calories for you non pointers.) That worked very well for me. I had 1 slice and some salad. In those days, it seemed to be enough. Now my problem is the PCOS and immediate need of eating like a diabetic. Which means watching my carbs and sugar.
Lately, I find myself not caring because pizza crust, among other white heavy carb items leave my guts in distress. Like, yuck gut. Boo. So, if I can find something to hold my pizza toppings that has better nutritional value without gut yuck I am all for it. [Read more…]
I have been experimenting with different types of pizza hoping I can find one that doesn’t take a whole lot of time when those pizza cravings strike. But, I also want to make sure I try to keep it low glycemic and low(ish) carb.
Thankfully, I found some low carb wheat tortillas that were also high in fiber. I even made some breakfast with them. I had some ingredients leftover from another pizza (hello, chicken crust?) and wanted to see if I could somehow make a pizza out of the tortillas. I had seem them around the web and wondered just how well the tortilla’s held up.
I am going to go out on a limb here and say that I doubt a single layer is going to hold a whole lot of toppings. [Read more…]
Phew. March really wore me out with all the Irish-American Heritage Month recipes and I missed out on National Nutrition Month. I can’t believe it’s already April! It should feel like spring, but, its pretty yucky outside here in MI. It’s been cold, wet, muddy and rainy. There are still piles of snow in the cornfield behind me, but for the most part, my yard is snow free! Whoopeeee!
We’re gathered together today to discuss cheese. mmmm cheese. I can’t imagine my life without it. More specifically though we are here to discuss California Dairy and the wonderful creamy cheese I tried.
But first I must apologize for the delay. My first care package didn’t arrive and by the time I figured out (real duh moment) it was not going to, I reached out the CA Dairy spokesperson who very promptly sent me a replacement. Sadly though I wasn’t able to join the contest but I am still obligated to post my recipe and review, which I am more than happy to do! I want to thank everyone for being so understanding about my late post. However, as my luck would have it, I was unable to locate CA Dairy cheese at the 2 larger stores I have close by so I ended up using my gift card to order some CA Dairy cheese on Amazon.
