I’m homesick. It gets worse with each passing year. When I left Oklahoma in 2007 I thought for sure I would be back. Maybe not to live, but at least to visit. Here we are 7 years later (going on 8) and I have not set foot on Oklahoma soil. That makes me incredibly unhappy. Life has not turned out at all how I expected it to and with each day being a financial struggle, I am not sure when I will get back home. That bothers me. I miss home a great deal. It’s everything I am and means the world to me. My friends there are like my family as I grew up with them. We went through hell and back together.

Have you ever had one of those moments where you weren’t really happy with how something turned out but you went ahead and pushed forward anyway? That’s kinda how I feel about these photos. I tried so many different props. White board, no white board. Zoom, no zoom. This chili just wasn’t having a photographic moment. To hell with it. I am going to post this recipe anyway. Yup, that’s me. I tend to do that from time to time. I know a lot of bloggers out there will scrap the recipe until they get the perfect photo. But you know what? I am not a photographer. I am STILLLLLL learning how to use the camera a year later. I am still trying to figure out how to get great pictures in my house. The sun only shines through my main window for so long. I learned a very important lesson the other day.
Never let my husband help me with recipe creation. Bless him. He tried.
He always tries. And bless him for always thinking he always knows what is best.
We had a giant bag of chickpeas in our freezer and I have been dying to test out some recipes to use them up. I came across this healthy recipe on SparkRecipes (sister site to Sparkpeople).
No recipe today. Bummer. I know. Today is all about yesterday’s healthy low calorie turkey chili and some sugar-free cast iron skillet cornbread.
