I’ve been trying to get back to my low carb / keto (ish) style of eating just so I can keep added sugars out of my diet. I haven’t been so good lately. PCOS isn’t going to fix itself and since there is no cure, I owe it to myself to find things I can eat which will help me manage it. A low carb lifestyle really helps with that, so I am on a mission to get back to that. I have been wanting to make these bacon wrapped mini meatloaf for quite some time. Shrimp and Cheesy Bacon Grits for One
Sometimes I hate cooking. Weird, right? Sometimes I hate eating alone.

Skinny Loaded Baked Potato Soup
Growing up, potato soup was one of my favorite dinners. My mother didn’t really believe in anything but whole milk and butter. So, her version wasn’t something I wanted to continue to eat as I try to get healthier. Every winter I have a craving for potato soup and over the years I have pinched calories where I could. Bacon Wrapped Stuffed Dates
A few months ago husband and I went to this small plates restaurant (tapas) in Flint, MI called 501 Bar and Grill. There is another place down the road that we’ve visited over the years, (Blackstones) and had been hearing about the 501 from plenty of friends. We finally decided we should give it a go. After our wine tasting event a few weeks back, we decided to grab some dinner before picking up kiddo. When we get time out and about we like to go to places we don’t normally get a chance to. I first mentioned Blackstones because it’s a little Irish pub and we don’t get to town often. We pull up, only to find out it’s apparently closed on Sunday’s. I found that a little weird.
