I’m not feeling very festive this year. We didn’t put our tree up. No decorations. Elmer our Elf came for his first visit over the weekend. Most of my shopping is done. Nothing is wrapped. I haven’t done any of my homemade gifts or packaged up my gift boxes for friends out-of-town. I made out 5 Christmas cards today. I’m just not feeling full of holiday cheer. While we were working on recipes to fill my March challenge of Irish recipes all month-long, we came across a few green recipes that we thought we might use. As the days ticked by, I decided to stick with traditional Irish recipes and save a couple of the green colored items for Easter. The color seemed much better suited. While the photos showcase some shamrocks, this wonderful little dessert will actually work well for any springtime holiday meal.
I am so in love with this recipe that I saved the best for last. I know a lot of you are thinking since they are shamrock shaped cookies I should have published this post prior to St. Patrick’s Day. Well, you might be right or you might be wrong depending on how you look at it. The wonderful thing about this recipe is that you can make the frosting any color and you can make these cookies any shape.
Since my cookie cutter collection only spans three themes – Christmas, Irish and Dogs, I’ll be using the shamrock shapes more often than not.
If you are looking for a sugar cookie that doesn’t taste like sugar or a frosting that isn’t too sweet, then you have found it!
If you are looking for a nice light cookie that you can partner with your tea like a biscuit or dunk in some coffee, this is that recipe!
Over the holidays I was given a bag of Monk Fruit in the Raw. I never heard of monk fruit up until that point. I signed up for a free sample around September or October. YUM wasn’t very old then so I was excited to get my hands on something that could potentially turn into a sponsor post.
My bag of Monk Fruit in the Raw arrived in November. I was excited to join the Recipe ReDux’s Monk Fruit in the Raw Holiday challenge, but the problem was, at that time I was not accepted into The Recipe ReDux. So, the Monk Fruit folks emailed me to let me know that I could not enter the contest. *sad face*
I made the cookies anyway and the good news is I am officially a member of The Recipe Redux and my first post will be this month!
