Not a recipe post today. Just some photos of the things that could have been. 😉 Sounds a little weird, I know.

I love asparagus. It’s one of my favorite vegetables. All my life my mother has called this goodie ‘ditch weed’ and for good reason. Every summer when we would travel from Oklahoma to Michigan my mother and I would take a drive out to my grandparents old farmhouse, just a few miles away from their current home. We would go pick these ‘weeds’ out of the ditches and wild patches that would form in the yard. Everyone in my family called them ditch weeds. I guess it was something my grandparent’s coined when the family lived on the farm. 

When I get fresh asparagus from the store or farmers market I am always transported back to those happy times with my mom. I don’t have a lot of happy childhood memories so I always make sure I hold on to the ones I do have.

Roasting asparagus with fancy mushrooms, some garlic and extra virgin olive oil is one of my favorites. I love how the asparagus is just a little bit crunchy.

Things don’t always turn out as planned. I have these great photos. I think about my mom, holding my hand as we walked down the road.

I take a quick breath as I am transferred back to reality.

Damn.

I burned them.

I don’t have any more so I can’t create another batch.

    1. Hahaha, I burn my fair share, too. I always blame it on my oven cooking too fast, though. It’s never my fault.

    2. Luckily I don’t burn things too often, but when I do it’s always something I can’t pretend like I’ve just “blackened” or “seared.”It’s always rolls!

  2. I am ashamed to say I burned my grilled cheese today. It is great to have something that brings back good memories for you. I am an asparagus lover but no one else in my house is.

  3. I have no idea why but I have never actually made asparagus for myself at home, I have it when I’m out but I don’t make it for myself. (There a few desserts that I do this with also, order them out but never make them myself). Sounds like a great combo, I LOVE mushrooms!

  4. I do love asparagus and mushrooms–but if you burned this I can just imagine what I would do to it!! My best memories are toddling out to my Grandmothers garden and grabbing veggies and munching down.

  5. I love asparagus too! I like to laugh it off when I mess up a recipe. You can prank someone by pretending to serve it to them and see how they react.

  6. I don’t like asparagus but the pic looks good. But the last thing I burned was garlic bread in the broiler. I forgot about it and it was like charcoal LOL.

    Favorite food memory: I remember my mom frying pork chops. My dad and I loved them.I still love them but I don’t fry much anymore.

  7. I don’t burn things often thankfully. I think the last one was an angel food over the summer. They are iffy little buggers. I do love me some asparagus. I make it with olive oil and parmesan cheese. YUM

  8. I haven’t burned anything recently but my husband has. The easiest in the world garlic bread and apple crisp! I was so sad and a little worried haha how? Such easy things!

  9. Those are two foods I could eat daily. I love them and eat them grilled, in eggs, on steak..if I can figure out a way to add them to a meal I do.

  10. The number of times that I have burned or overcooked our dinner is too many to count. As long as there is something salvageable at the end of it for the meal, you are good. Looks great!

  11. Asparagus is one of my favorite foods too. I like to grill it with olive oil, then top it with parmesan cheese. I’ve never paired asparagus with mushrooms. Will have to give it a try.
